This week I would like to share with you Raisins Soaked in Pedro Ximénez Sherry – a very simple but delicious dessert that is great if you want something quick – just pour them over a scoop or two of vanilla ice cream. Perfect any time and an ideal Christmas dessert.
How to make Raisins Soaked in Pedro Ximénez Sherry
I came across this dessert in a local pub The Hurstwood which is situated in High Hurstwood, a village just outside Crowborough in East Sussex. They serve raisins soaked in sherry poured over a scoop of vanilla ice cream and it is absolutely delicious. I thought this would be fairly easy to make myself.
I just filled a jam jar with raisins and topped it up with sherry. I used Pedro Ximénez sherry which is rich and sweet and pairs perfectly with the raisins. I then sealed the jar and kept it in a cool place for two weeks – you should let the raisins soak for at least one week.
We tried them after they had been soaking for almost a fortnight. The raisins had absorbed some of the sherry and were plump and soft and the sherry had become syrupy. My son-in-law and granddaughter had made some ice cream in their Cuisinart ice cream maker machine and it was a perfect finish to our meal.
