I love drizzle cakes and this Lemon Drizzle Traybake is based on the Lemon Drizzle Cake that was always a favourite at the tea rooms.
When I was asked to sell some of my cakes and bakes at my local Crowborough Community Orchard‘s Blossom Day fund raising event recently, I was inspired to turn some of my existing cake recipes into traybakes. When making cakes for fund raising events I find traybakes are very practical. They are quick to make and very easy to portion and serve.

I already have Pear, Ginger and Walnut Traybake and Cherry Chocolate Cake Traybake recipes on the blog, which I made for last year’s for Crowborough Community Orchard’s Blossom Day. I have now added Carrot Cake Traybake, Cider and Apple Traybake and Raspberry and Lemon Drizzle Traybake, as well as the Lemon Drizzle Traybake here.
How I changed my cake recipes into traybakes!
Carrot Cake Traybake
For Blossom Day I decided to bake my Carrot Cake recipe as a traybake. I baked it in a 8 inch x 12 inch traybake tin. It took slightly longer to cook – 40 minutes rather than 35 and I only needed half the cream cheese icing, as I only iced the top of the cake. It cut into 12 generous portions.
Cider and Apple Cake Traybake
I also converted my Cider and Apple Cake recipe, cooking it in the 8 inch x 12 inch traybake tin, rather than a 9 inch cake tin. This time it took less time to bake – 45-50 minutes, rather than 1 ½ hours and again cut into 12 generous portions.
Raspberry and Lemon Drizzle Cake Traybake
The other cake I converted into a traybake was my Raspberry and Lemon Drizzle Cake. It took 45 minutes to bake – less time than a 9 inch cake and it cut into 12 generous pieces.
Lemon Drizzle Traybake
Although I do have a recipe for Lemon Cake on the blog, when I was looking through all of my cake recipes I realised that I had not shared with you my tea rooms recipe for Lemon Drizzle Cake – so look out for this in the future.
In the meantime here is the recipe for the traybake version:
Summer Lemon Drizzle Traybake and other traybakes

As summer fêtes and fairs approach and you are asked for contributions for cake stalls, do try making this Lemon Drizzle Traybake – it went down very well at Blossom Day! It’s also well worth experimenting with some of your favourite cake recipes – they should mostly convert very well into traybakes.
Look out for some more traybake recipes coming soon!
Until next time happy baking!
Tanya

Love a traybake, these recipes look delicious. Have you come across Old-fashioned Sunday School Cake? Well, that’s what they call it in Wales, where we discovered it, but in Liverpool often just School Cake. A deep sponge traybake with a solid layer of white icing generously sprinkled with bright hundreds and thousands. So delicious.
No I haven’t heard of Sunday School Cake, but it does actually sound like something I used to have for a Sunday school treat!
Do you happen to have a recipe?
Thank you!
Mmm delicious!
Thank you!
Hi Tanya
I had family over and decided to make your Lemon Drizzle Traybake. It was absolutely delicious and would definitely recommend anyone to make it. It was a good 10 out of 10 – or even an 11!! I particularly liked the crunch to the lemon drizzle on the top. I think I will try the carrot cake traybake next weekend.
Hi Sally,
Thank you so much, I’m really pleased that you liked it.
