Gluten Free Scones

Several people have requested the recipe for the Gluten Free Scones we used to serve in the tearooms. It did originally take me quite a bit of experimentation before I arrived at a recipe I was happy with.

The tea rooms was very handy when it came to recipe development – my customers were very willing to test my creations! They were most complimentary about the final version of these gluten free plain scones – as well as my Gluten Free Cheese Scones.

Ingredients you will need to make Gluten Free Scones

I have a full printable recipe card below but here are the ingredients and directions:

  • 7 ounces / 200 grams plain gluten free flour (I use Doves Farm)
  • 1 ounce / 30 grams soya flour
  • 1 teaspoon xanthan gum
  • 1 tablespoon gluten free baking powder
  • 1 ounce / 30 grams caster sugar
  • 2 ounces / 55 grams butter
  • 1 egg
  • Approx. ¼ pint buttermilk (Marks and Spencer have an excellent buttermilk)
  • A little milk

Directions

  1. Pre-heat the oven to 220°C / 200°C Fan / 425°F / Gas Mark 7.
  2. Sieve the two flours, xanthan gum and baking powder into a mixing bowl and stir in the caster sugar.
  3. Rub the butter into the flour mixture until it resembles fine breadcrumbs.
  4. Add the beaten egg and most of the buttermilk and mix to a very soft dough. Try and incorporate as much liquid as you can. You want a very wet soft dough.
  5. Tip out onto a well floured working surface (using the gluten free plain flour).
  6. Knead lightly until smooth, then flatten the dough with your hands to approximately 1 ½ inch thick.
  7. Cut out with a round metal cutter (2 inch / 5 cm) and place on a baking tray lined with parchment. I made 6 small scones using the 2 inch / 5cm cutter.
  8. Brush the tops of the scones with milk.
  9. Bake in the pre-heated oven for approximately 15 minutes or until well risen and golden brown.
  10. Cool wrapped in a clean tea towel on a wire rack.

Equipment you will need to make these Gluten Free Scones

You don’t need any special equipment to make gluten free scones. As well as the essential kitchen items you will need the following – a baking tray, some parchment paper, a metal cutter, a mixing bowl and a wire rack.

Serving Gluten Free Scones

Serve with just butter, butter and jam or clotted cream and jam. In the photos here they are served with clotted cream and my homemade greengage jam.

As with scones made with wheat flour these gluten free scones should be eaten on the day of baking or frozen. They do freeze very well and can be quickly defrosted in a microwave. Any day old scones are delicious toasted and dripping with butter!

Next time!

Next time I will give you my recipe for Gluten Free Cheese scones which were also a tea room favourite!

Until then ‘Happy Baking’!

This recipe looks wonderful and I’ve forwarded it to a friend who has to have everything possible gluten free. She’ll be delighted I know. Thanks.
