I always try to make my own Royal Icing and Marzipan for a Christmas cake. Although you can buy some very good marzipan, if you do have the time I think it is well worth the effort to make it yourself. My Almond Icing (Marzipan) recipe makes enough to cover a 9 inch / 23 cm cake.
